If winter has you dreaming of green things and warmer days, February is your moment to get your hands in the soil — even if it’s just indoors for now. For Zone 3 growers especially, this is the month where the gardening season officially begins (at least in our hearts).


🌿Vegetables & Herbs to Start Indoors

February is prime time for slow growers that need a long runway before transplanting outdoors.

Top priority starters:

  • Onions & Leeks – These take their sweet time, so early February is perfect.

  • Peppers & Eggplant – Heat lovers that grow slowly — give them a head start now.

  • Celery – Another patient crop that rewards early planning.

Cool-season brassicas:

  • Broccoli

  • Cabbage

  • Cauliflower

  • Brussels sprouts

🌿These will be ready for early spring planting when the chill begins to loosen its grip.

Leafy greens for an early jump:

  • Kale

  • Swiss chard

  • Lettuce

🌿They germinate quickly and bring a little instant gratification to your seed trays.


Herbs to wake up your kitchen garden:

As tempting as it is — hold off on tomatoes. In Zone 3, early-to-mid March is ideal. Starting too soon can leave you with leggy, root-bound plants before the late-May transplant window (unless you’ve got plenty of pot-up space).
